Barb's Pumpkin Cookies*

1/2 cup butter or margarine (1-1/2)
1-1/2 cups sugar (4-1/2)
1 egg (3)
1 cup cooked or canned pumpkin (large can)
1 teaspoon vanilla (3)
2-1/2 cups all-purpose flour (7-1/2)
1 teaspoon baking powder (3)
1 teaspoon baking soda (3)
1/2 teaspoon salt (1-1/2)
1 teaspoon nutmeg (3)
1 teaspoon cinnamon (3)

Cream butter and sugar together until light and fluffy. Beat in egg, pumpkin and vanilla. Mix and sift flour, baking powder, baking soda, salt, nutmeg and cinnamon. Add to creamed mixture, mix well. Drop by teaspoons onto well-greased cookie sheets. Bake at 350 for 10 to 15 minutes or until lightly browned. Remove from cookie sheets while still warm; cool on racks.

Note: quantities in (parenthesis) are to represent a triple batch that allows for use of a full large can of pumpkin
