Cheddar Cubes

10 oz. cheddar cheese, cut into 3/4 inch cubes
1/2 cup cornstarch
1 large egg, beaten slightly
1 cup fine bread crumbs
vegetable oil for frying

In batches, coat the cubes in the cornstarch; shake off excess. Coat thoroughly in egg and bread crumbs, patting and pressing on the crumbs to help them adhere. Let the coated cubes stand on a sheet of waxed paper for 20 minutes.

In a deep fryer, heat two inches of oil to 350; fry the cubes in batches, turning them once until golden brown (about 1-1/2 to 2 minutes). With slotted spoon, transfer cube to paper towels to drain. Serve with applesauce.
