Lemon Meltaways

Cookies:
1-1/4 cups all-purpose flour
1/2 cup cornstarch
1/3 cup powdered sugar
3/4 cup butter softened
1 teaspoon grated lemon peel
1 tablespoon lemon juice

Frosting:
3/4 cup powdered sugar
1/4 cup butter, softened
1 teaspoon grated lemon peel
1 teaspoon lemon juice

In large mixer bowl, combine all cookie ingredients. Bake at low speed, scraping bowl often, until well mixed (2 to 3 minutes).

Divide dough in half. Shape each half into 8x1 inch roll. Wrap in plastic food wrap. Refrigerate until firm (1 to 2 hours).

Heat oven to 350. With sharp knife, cut each half into 1/4 inch slices. Place 2 inches apart on cookie sheets. (Cookies will not brown) Cool completely.

In small mixer bowl combine all frosting ingredients. Beat at medium speed, scraping bowl often, until fluffy (1 to 2 minutes). Frost cooled cookies.
