1 lb. Bob Evans Italian Roll sausage
1 egg
1/2 cup bread crumbs, plain, fine
1/2 cup red pepper, diced
1/2 cup pepperoni, finely diced, casing removed
1/3 cup celery, diced
1/4-1/3 cup scallion, sliced green part only
3 Tbsp. fresh chopped parsley
1/8 tsp. garlic powder to taste
black pepper to taste
2-3 dashes hot sauce to taste
Preheat oven to 375. On a clean cutting board, prepare vegetables and pepperoni. In a large bowl, combine sausage, bread crumbs and egg. Mix lightly together. Add remaining ingredients and thoroughly combine until well blended. On a medium size sheet pan, spray with cooking spray or use non-stick pan. Roll meatball mixture into 1 to 1-1/2 inch pieces and place on sheet pan. Bake 10 to 12 minutes or until no longer pink. Place on serving tray and garnish. Serve immediately. Makes 20 to 22 individual meatballs. Refrigerate leftovers.
Can substitute Bob Evans Original recipe or Hot and Zesty Sausage roll.
